Opening a bar in Portland, 2021

The tiniest bar in Portland seeks a full on premise liquor license, which means they must have 30 seats inside and 5 hot meals.

An almost impossible feat for a 300 ft^2 space with no kitchen.

Restricted to only serving beer and wine, we took on the challenge of creating fresh, innovative cocktails to appease even the average Old Fashioned sipper. Inspired by Oregon’s fresh fruit and winery culture, Sangria cocktails were the clear solution.

Together, we transformed an old bar that had gone into hibernation during the pandemic and revived it into a neighborhood community space. Originally there were eight seats inside. It was so small that you could talk to everyone in the room at once. People would pop in from the street and join our discussions. They kept coming back, so we built an outdoor patio.

Chandelier was a meeting space for friends, neighbors, and strangers. Some of my favorite evenings at Chandy were surrounded by people I had just met.

The Fitz x Sorose Holiday Pop-Up

entrepreneurial journey: 2020

Sorose Holiday Pop-Up catered to the residents and friends of The Fitz, located on NW 23rd, so they could finish their holiday shopping without having to leave their building.

Products were sourced from local businesses to combat supply chain issues by supplying products made and distributed in Portland.

The idea was created to be transported to places where residents have limited mobility from the location, such as hospitals and elder communities.
